Avocado with egg, baked in oven
  • 3 avocados
  • 2 eggs
  • 1 onion
  • 1 can of tuna, unseasoned
  • 1 apple
  • 1 bell pepper
  • 1 balsamic vinegar
  • olive oil – we use a delicate one from Tuscany - extra virgin fillippo berio
  • ½ lemon
  • - salt
  • - pepper
  • - grated cheese

1 Cut the avocados in halfs, core and peel them. Should the avocados be too mature to peel them it’s ok to put them in the oven with the skin. Drizzle the flesh of the avocados with lemon juice, crack the eggs and put them in seperate bowls.
2 Carefully pour them in the holes of the avocados. Enlarge the hole if it’s too small. Season with salt and pepper and put the 2 pieces on an oven dish. Base them on aluminium foil if necessary. Preheat the oven on 220°C and bake 15 5to 17 min.
3 Take the third avocado, peel and dice it. Also dice the pepper and and the peeled apple. Put all of it in a bowl. Add the tuna, the chopped onion, salt and pepp
