Summer Salad
Ingredients
  • 2 different types of lettuce
  • ½ cucumber
  • - leek
  • 2 tomatos
  • 5 strawberries
  • 2 carrots
  • - zucchini
  • - halloumi
  • - oil
  • - vinegar
  • - salt
  • - pepper
  • - chili

Method
1 First the lettuce and all other ingredients should be cleaned with water. Cut the leek in thin slices and the cucumber in small pieces. Please put the lettuce leafs, leek and cucumber in the salad bowl. Prepare the strawberries by cutting them also in small pieces and put them in another small bowl. The strawberries will be used as a topping at the end.
2 Now cut the zucchini, the carrots and the halloumi in thin slices. Put some cooking oil in your pan and grill the vegetables and cheese. You can use some salt and pepper. If you want your vegetables a little bit hotter you can also use some chili.
3 While your vegetables and cheese are having a BBQ in your pan you have some time to prepare the marinade for the salad. Put 2 tbs olive oil and 4 tbs vinegar (I took pear balsamic vinegar) in a cup. Add 1 pn salt and as much pepper as you like. Taste the marinade – maybe you have to add some water depending on your vinegar.
4 As far as the vegetables and the halloume are perfectly grilled it is time to arrange the salad. Put the marinade to the salad and place it on a big plate. Put the grilled vegetables and cheese on the salad. At least put the strawberries on top and serve the salad.
5 This is a healthy and quickly prepared dish for the upcoming summer time.
